The cake was supposed to be served with whipped cream. Guess who forgot to pick up whipping cream at the store yesterday?

(121,582 posts)There's no point in cooking something special when it's just me and the cat and nothing going on. I don't like turkey much anyhow, so if I'd had a Thanksgiving dinner it would have been something else.

(924 posts)we do Cornish Game Hens. Rest of the sides are pretty much standard ... except that our house is a sweet potato with marshmallow topping free-zone.

(37,716 posts)This has a pecan praline crust. As the web site says, you won't go back to marshmallows once you've tried this. I have always loved sweet potatoes, and this is a great way to enjoy them. They're packed with nutrients*, too.
Not sure what purpose the two eggs serve, but I didn't use them. No problem.

(924 posts)mashed, with freshly cracked black pepper and just a splash of orange juice. We have a diabetic in the house, too, so we appreciate sweet potato's place on the glycemic index.

(544 posts)Chopped liver appetizer, dressing and gravy, cranberry sauce, and pecan pie for dessert. I thought about adding a green veg, but decided Superman couldn't overcome the unhealthiness of this meal, so why bother? It's a holiday; back to healthy tomorrow.
I also cooked 5# of potatoes with a lot of leeks and canned a gallon of potato-leek soup. There's a nice pint portion left over in the fridge, as well.

but Ive been stressed over the last two months because our landlord is selling, we have to be out by Dec. 6th, and are still waiting for approval on the only place we can afford (fingers crossed for Monday!), held up because my sons been laid off until hurricane damage is cleared up from Helene AND Milton, AND his car was badly damaged by the latter when a tree fell on it and shattered the windshield. Havent been eating or sleeping well for weeks, losing weight (normally would be a good thing but Im in starvation mode). Tonight, I managed a decent serving of Japanese fried rice, biggest meal Ive had in weeks.
Stirring the cauldron for an okay on the rental. Never had stress like this before and it sucks the big weenie. Florida is not the place you want to be!
