But I'll bring a corn casserole for which I got the recipe from Pat Summitt.

(26,848 posts)Alas, it requires a sweet Italian dressing I cannot get in NM.
Here's the recipe if you have the joy of living where you can get the dressing. This is the only sweet Italian dressing I know of. All other Italian dressings out there are sharp/tangy.
1 jar Mazaretti Sweet Italian Dressing. This is the most important part, and if you cant buy this where you are, youre totally screwed. I have never been able to find any other sweet Italian dressing out there.
1 box tri-colored Rotini. Cook according to box directions.
1 red bell pepper, 1 green bell pepper, 1 orange or yellow bell pepper. Chop.
1 cucumber, peeled, internal seeds scooped out, and diced.
1 green zucchini, diced. Dont peel.
A stalk or two of celery, diced.
About a quarter cup of chopped RED onion. I know, they are really purple but theyre called red onions.
The volume of veggies should be the same as the volume of cooked pasta.
You can do all the veggie chopping while the pasta is cooking. When done, rinse very well with cold water, then pat dry. Do several good twists of a pepper grinder. If you dont have a pepper grinder, go out and buy one. Its well worth the investment. Sprinkle with Kosher salt. I hope you already have Kosher salt, if not go out and buy that.
Now dump in all the veggies. Now dump the jar of sweet Italian dressing over everything and mix well.
Best, best pasta salad ever.

(7,065 posts)3 oz strawberry flavored gelatin
2 cups cottage cheese, small curd
20 oz canned crushed pineapple in juice (drained & juice reserved)*
1/2 lb fresh strawberries
1 cup cold heavy whipping cream*
1 tsp vanilla extract
2 Tbsp granulated sugar
Instructions
Wash, remove the stems, and quarter the strawberries. Feel free to cut any large pieces in half again. Set the strawberries to the side.
With a strainer and a small bowl, drain the crushed pineapples really well and reserve the pineapple juice.
In a blender*, add the strawberry gelatin, cottage cheese, and ⅓ cup of the reserved pineapple juice. Blend until smooth then add the mixture to a large bowl.
Next make the whipped cream. In a separate metal or glass bowl, preferably a bowl that has been chilled in the refrigerator, add heavy cream, vanilla extract, and granulated sugar. Use a hand mixer or stand mixer to whip the cream on high until stiff peaks form. Stop the mixer occasionally to test the stiffness of the peaks and to avoid over whipping.
Now carefully fold the whipped cream into the strawberry gelatin mixture.
Add the crushed pineapples and chopped strawberries to the bowl and carefully fold them into the whipped cream mixture until everything is evenly distributed.
Refrigerate jello salad for at least 2 hours so the ingredients have a chance to set and chill before serving. Enjoy!
Delicious and a staple in the south for Christmas dinner.

(22,819 posts)Gorgeous snow white cake, filled with well drained crushed pineapple and a good handful of coconut mixed in with some of the frosting.
Frosted with Ermine Frosting and even more coconut pressed onto the top and sides.
Boiled custard is a deep seated holiday tradition in Kentucky and Tennessee; it is a substitute for egg nog. In the old days, egg nog was eggs whipped with whiskey (which kills any bad stuff in the raw eggs), then folded together with whipped cream and meringue. More whiskey added to one's glass if desired
Well those teetotaling Baptists in KY & TN weren't having that so they made boiled custard, which is a thin drinkable custard heavily flavored with vanilla and cooked carefully so it doesn't get too thick. The only thing I can compare it to is zabaglioni. It is divine. When I was growing up, just about any time you opened a refrigerator around the holidays there would be a Mason jar of boiled custard. (those teetotallng old ladies in my family still had to have their teaspoon of "flavoring" which was Bourbon.

(81 posts)Cook and chop into pieces a pound of bacon. Set aside. Line a baking sheet with parchment paper. Spray with cooking spray. Roll out a can of crescent rolls on baking sheet to cover as much as possible. Prick all over with fork. Drizzle with 1/8 cup pure maple syrup. Spread 3/4 cup brown sugar evenly over all. Spread the cooked bacon pieces evenly over all. Drizzle with another 1/8 cup maple syrup. Bake in preheated 375 degree oven for 22 minutes. Cool completely and cut into pieces.
