Anyone else digging Hodo yuba noodles?

I've never had the time or inclination to learn how to make yuba noodles but I've loved them when I've stumbled across them.

Now there's a company in CA selling them as pre-packaged, pre-seasoned meal starters in health food-type places. The largest local co-op in western WA is carrying them and my mother-in-law found them at Target out in Kitsap County. Target, of all places!

These are not the noodles you want if you're looking for a replacement for pasta. They aren't pasta. But if you (like me) remember the glory of the UnTurkey before that company gave up the ghost, buy these.
