Coconut Cream??? Cross posting with cooking Group

OK I’m new to the meat free world, and slowly getting my family off the dairy Addiction, and I’ve been using a can of coconut milk to make my creamy soups and sauces.

I accidentally Grabbed a can of coconut cream at Trader Joe’s the other day. Thank goodness I had some coconut milk to finish my soup! 😁 Because this cream is so sweet and almost like a butter!

I’m not quite sure Exactly what to do with it. I thought about adding it to a veggie curry that I make that is sweet and savory with potatoes, onions and apples. Any recommendations for the newbie?

Yes, definitely soups. You can also make a stellar whipped cream substitute. (Refrigerate can overnight, also refrigerate mixing bowl and mixer blades. Scoop out the solids into cold bowl and beat on medium, turn to high until you get stiff peaks. Add a touch of vanilla and sugar. You can use this as whipped cream or treat it as a mousse and layer with summer berries.)
