What's for Dinner, Mon., July 13, 2026

Steak and Gorgonzola Salad with Caramelized Onions. Also has sliced Persian cucumbers, red tip lettuce, and baby arugula. I used petite sirloin; very tender.

In the summer, my salad appetite grows to the point where I have to use a large glass pie plate for my salads!

Dessert is wafer rolls, filled with lemon-flavored cream. Iced decaf coffee with half 'n half.

I have the Corelle dishes that are basically the same as a pie plate. We refer to them as feeding troughs—and yes, they’re perfect for salads!

... to freeze, so I'm not sure what I'll do for dinner yet. Honestly, I've been so busy since Ms K broke her hip that I'm not really looking forward to cooking tonight. Time to take a good look around the refrigerator and freezers, lol. What's the point of saving extra meals, otherwise?

If I do cook tonight, maybe breakfast for dinner, corned-beef hash and eggs, with fried potatoes, and toast.

I finished the orzo skillet I made yesterday.

I bought fresh fruit a couple days ago, and made a fruit salad, flavored with homemade vanilla extract, cinnamon, nutmeg, a smidge of sugar and some topping.

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, carrots, cut asparagus, sliced mushrooms, and minced garlic. I stirred in 7 oz of mashed firm tofu, Jax Tofu seasoning and fresh chopped dill. Had some seed crackers with hummus as well. Cheers!🥂

Ingredients

Marinade:

¼ cup balsamic vinegar
¼ cup olive oil
1 tablespoon chopped fresh rosemary (1 teaspoon dried can be substituted)
1 tablespoon soy sauce
2 teaspoons finely chopped garlic
1 teaspoon Dijon mustard
½ teaspoon kosher salt
Fresh ground black pepper, to taste

1-1/2 pounds flank steak

Caramelized Onions:

1-2 tablespoons olive oil
3 cups thinly sliced onions
Kosher salt
1 teaspoon chopped fresh rosemary (1/2 teaspoon dried can be substituted)
Fresh ground black pepper

3-4 ounces crumbled Gorgonzola cheese
