1. Reading that I don't understand why the "point" is important.

Keeping one's inflammation just below the point doesn't make much difference.

I do much better on low sugar, no white flour but also whole wheat flour only about 3-4 times a week. Ice cream in moderation. And quality proteins, no farm raised. Also not a fan of meat substitutes. They're all starches, oils, complex substitutes. Another key is under-eating, and stop eating by 7 pm. All of this helps burn calories, and bloat ebbs. Just my opinion though, YMMV
