7. Potato leek soup and applesauce, both from the pantry

Wednesday

DH got a rotten tooth pulled today and we're on soft food for a couple days. I'm trying to think of things that are soft enough but don't raise his glucose too much. Tomorrow morning will be egg custards with porridge later.

He's of course asking for gelato. I'll likely get him some when I'm out tomorrow.

I'm also thinking of meatless lasagna, if I make the noodles thin enough and cook them really soft. But I won't be able to have the nice toasty, but tough, layer of mozz on top. Maybe just a light sprinkle.
